Ingredients for 4 people:

  • 8 sandwiches
  • 2 avocado’s
  • 1 cup RucolaCress
  • 4 tsp olive oil
  • pepper and salt
  • 100g beetroot
  • 100g feta

Method:

  1. Spread the sandwiches with olive oil and toast them in a toaster
  2. Siege the toast with the sliced smoked beetroot and crumble the feta on top
  3. Halve the avocados, cut them into slices and place them on the toast
  4. Garnish the toast generously with the RucolaCress and a pinch of salt and pepper
