Ingredients for 4 people:
- 8 sandwiches
- 2 avocado’s
- 1 cup RucolaCress
- 4 tsp olive oil
- pepper and salt
- 100g beetroot
- 100g feta
Method:
- Spread the sandwiches with olive oil and toast them in a toaster
- Siege the toast with the sliced smoked beetroot and crumble the feta on top
- Halve the avocados, cut them into slices and place them on the toast
- Garnish the toast generously with the RucolaCress and a pinch of salt and pepper
