Ingredients for 4 people:

  • 3 Sweet Potatoes
  • 1 kg of Tomatoes
  • Olive oil
  • 2 Onions
  • 3 Cloves of Garlic
  • 1 Cup of RucolaCress
  • 1 Zucchini
  • 1 Bunch of Basil
  • 125 g of Parmesan cheese
  • 100 g of Dairy spread
  • 500 g of Pasta


Chop the onion and cut the tomato and zucchini into cubes. Heat the olive oil in a large frying pan and fry the onion with the 3 cloves of crushed garlic. Add the cubes of tomato and a portion of the zucchini and let it simmer for about 10 minutes on low heat. Then bake the rest of the zucchini in a separate pan and cook the pasta according to the instructions.

After 10 minutes add the dairy spread, parmesan cheese and a handful of finely chopped basil and fry for 3 minutes. Puree the sauce with a hand blender. Add the fried courgette and some extra basil and season the sauce with salt and pepper. Then mix the delicious tomato sauce with the pasta and garnish with parmesan cheese and RucolaCress.
